Ingredients:
(Wind Puffs)

5 cup Water, divided
1/2 cup Butter
1/2 tsp Salt
1 cup Sifted flour
4 each Eggs
Cooking oil for frying
3 cup Sugar
Peel of 1 lime

Instructions:
Place 1 cup water, the butter and salt in a saucepan. Heat to boiling.
Remove from heat, and add flour all at once stirring vigorously until
well mixed. Add eggs, one at a time, mixing until well blended after
each addition. In a deep kettle, heat oil to 370` on a frying
thermometer. Drop mixture into oil by tablespoonfuls, frying 5 at a
time in the following way: Fry for 2 minutes uncovered, 2 minutes
covered, 2 minutes uncovered. Drain on absorbent paper, and place in
a dessert bowl. Mix remaining ingredients with 4 cups water, and cook
syrup until candy thermometer registers 222`. Pour syrup over the
fried bunuelos and serve warm. Makes
