Ingredients:
2 cup cooked diced chicken
1/4 cup sour cream
1/4 cup mayonnaise
1/4 cup finely chopped carrot
2 tbsp cilantro
2 tbsp capers (drained)
2 tbsp red bell pepper - finely chopped
2 tbsp lemon juice
1/2 tsp ground cumin
1/4 cup finely chopped onion
1/4 cup tabasco brand jalapeno sauce
1 avocado, peeled and wedged
1 lettuce leaves
1 paprika
Instructions:
Toss all ingredients except avocado, lettuce and paprika. When well
mixed refrigerate, 30 minutes. Serve on lettuce leaves with avocado
wedges. Sprinkle with paprika.
