Mexican Guacamole Recipes

Ingredients:

1 avocado, halved and pitted
1 tbsp fresh lime juice
1 tomato, peeled and seeded chopped
2 tbsp chopped red onion
2 tbsp chopped fresh cilantro, fresh coriander
1 jalapeno, seeded and minced
1/2 cup yogurt cheese
1/4 tbsp salt, optional
freshly ground pepper, to taste

Instructions:

Using a spoon, scoop avocado pulp into a bowl. Add lime juice. With a
fork, coarsely mash avocado. Stir in tomato, onion, cilantro, jalapeno,
and yogurt cheese. Season with salt and pepper. Serve within an hour at
room temperature. (Makes about 2 cups (47 2 ml))
