Ingredients:
2 cup zucchini, shredded
1/4 cup fresh cilantro, snipped
2 tbsp lime juice
2 tbsp vegetable or olive oil
1 tsp salt
1/4 tsp sugar
1/4 tsp pepper
Instructions:
Mix all ingredients in glass or plastic bowl. Cover and refrigerate
at least 1 hour. Makes about 1 1/4 cups relish.
